Production area and history

Production area: it includes several municipalities, five in the province of Ragusa, two in the province of Caltanissetta and two in the province of Catania. The types produced are Cerasuolo di Vittoria and Cerasuolo di Vittoria Classico. We are in the southern area of ​​Sicily, an area rich in oenological history with the Greeks and Romans, instead it had a period of crisis during the Muslim domination.
The Cerasuolo di Vittoria of the current typology was born in 1606, when the city of Vittoria was founded: its founder Vittoria Colonna Henriquez, in fact, in that year gave the first 75 settlers a hectare of land on condition that they cultivated another one as a vineyard.
Viticulture has developed considerably over the centuries so much that Labate Paolo Balsamo, in 1808 will write:
Vittoria's campaign is about ten thousand corpses (230,000 Ha); it is mostly sandy, limestone; it produces proportionally little of wheat, barley and legumes, a lot of oil, canape, carob; and above all wine which has a lot of credit and must, in my opinion, be regarded as the best of those for meals on the whole island… .. it is almost not composed of other vines than grossonero, calabrese (nero dAvola) and incomparably more from frappato ....

Vines - Minimum alcoholic strength - Aging and qualifications

Ampelographic proportion: from 50% to 70% of Nero dAvola and from 30% to 50% of Frappato.
Cerasuolo di Vittoria:
- minimum total alcoholic strength by volume 13% vol;
Cerasuolo di Vittoria Classico:
- minimum total alcoholic strength by volume: 13% vol;
The Cerasuolo di Vittoria controlled and guaranteed designation of origin wine must be released for consumption only after a period of aging in bottle for at least 3 months and in any case not before June 1st of the year following the harvest. For the Cerasuolo di Vittoria Classico wine with controlled denomination of origin, the period of refinement in the bottle cannot be less than 8 months and the release for consumption cannot take place before March 31 of the second year following the harvest.

Organoleptic characteristics

Cerasuolo di Vittoria:
- color: from cherry red to purple;
- smell: from floral to fruity;
- flavor: dry, full, soft, harmonious.
Cerasuolo di Vittoria Classico:
- color: cherry red tending to garnet;
- smell: cherry, which in aged wines can also tend to sensory notes of dried plum, chocolate, leather, tobacco;

Pairings and serving temperature

It goes excellent with roasted white and red meats, braised beef, small game on the spit and seasoned spicy cheeses.
